Fresh reviews - Good and Easy Eats

Good and Easy Eats is the latest recipe ebook by my friend Kim Wilson, who you may remember from her guest post on Craving Fresh last year about going gluten-free.

Kim had to radically rethink her family's diet in 1998, when her husband was diagnosed with Meneire's disease. By changing to a whole foods, plant-based diet, the Wilsons have seen incredible healing, rejuvination and weight-loss.

Kim has written numerous recipe books based on what she's learned. Her latest ebook Good and Easy Eats is full of gluten-free, vegan recipes that will appeal to the whole family.

Recipes for the whole family
Kim has included enough recipes to feed a family something different for breakfast, lunch, snacks, dinners and dessert every day of the week.

Breakfast: Kim's breakfast recipes are simple and tasty, including smoothies, muesli, hot cereal, pancakes and muffins.

Recipes free of common allergens and problematic foods
If you're dealing with allergies and food intolerances in your family, Good and Easy Eats will be so helfpul as its recipes exclude some of the most common allergens - eggs, gluten, wheat, soy and dairy.

Food preparation
One thing I love about this book is that Kim has taken the time to explain proper food preparation.

Anyone cutting food groups out of their diet needs to ensure the foods they are still eating are properly prepared to extract maximum nutrition. Kim has done that, teaching how to soak foods like nuts, seeds, rice and beans to break down their anti-nutrients and release their goodness.
