Plan it - Don't Panic menu plan week 1

For the next 6 weeks I'll be joining in with Keeper of the Home's Plan it - Don't Panic meal planning challenge to try to motivate me to menu plan.

Lately I've been planning my meals the night before (at best), or the hour before (at worst). I'm really hoping this meal planning challenge helps me get more organised.

Dinner plan
Monday - Lasagne (yes, I'm cheating and including last night's dinner in my plan)

Tuesday - Spicy beef casserole

Wednesday - Shepherd's pie, using leftover beef casserole.

Thursday - Mexican tomato soup

Friday - Cumin and orange roast chicken with roast vegetables.

Saturday - Tortilla wraps with leftover roast chicken, cheese and salad greens.

Sunday - Stir-fry beef and broccoli with cashews


  1. Meal planning saves my life! Such an easy way to work. Though I always have a few extras in the house which are easy to whip up when I am not in the mood!!

  2. I'm so irregular about it. I'm trying to become more organised in all areas of life, but it doesn't come easily to me.
