Camp freezer cooking

In a couple of weeks our wee family is heading off to snow camp at Mt Ruapehu! Wohoo! This will be our fourth year in a row helping out - my third as camp cook. Last year I was 7 months pregnant with L, so I didn't get to do any snowboarding. I'm hoping this year Paul will watch L some of the time so I can hit the slopes. I'd also love to take L sledding as it will be her first time in the snow!

In any case, I'm usually much more organised about my camp menu planning than I have been this year. Thoughts about moving to Wellington next month have me all distracted. So when I saw that Money Saving Mom and Life as Mom are freezer cooking again I thought I would use it as inspiration to get planning.

Here's what I'm thinking we're going to eat at camp, and I'll make notes of the food I plan to prep and freeze beforehand.

Saturday
Dinner (leaders only x9) Smoked salmon frittata; Salad

Sunday
Breakfast (leaders only x9) Scrambled eggs, bacon, sourdough toast (bake before), fried bananas
Lunch (leaders only x9) Pumpkin soup (cook & freeze before); Sourdough bread (bake before) 
Dinner (whole camp x34) Nachos (cook & freeze mince before); Sweet cabbage salad
Dessert (x34) Chocolate self-saucing pudding; Vanilla icecream

Monday
Breakfast (x34) Baked beans, toast, cereal, tinned fruit
Lunch (x34) Filled rolls, muesli bars, home baking, fresh fruit
Dinner (x34) Lasagne (cook & freeze before); Salad
Dessert (x34) Apple crumble (stew & freeze fruit before); Custard

Tuesday

Breakfast (x34) Porridge, toast, cereal, tinned fruit
Lunch (x34) Filled rolls, Le snaks, home baking, fresh fruit
Dinner (x34) Spicy beef casserole (cook & freeze before); Green beans & broccoli
Dessert (x34) Ambrosia

Wednesday
Breakfast (x34) Baked beans, toast, cereal, tinned fruit
Lunch (x34) Filled rolls, Muesli bars, home baking, fresh fruit
Dinner (x34) Hamburgers; Wedges (prep seasoning before)
Dessert (x34) Butterscotch pudding (prep & freeze before) & sauce; Fresh whipped cream

Thursday
Breakfast (x34) Porridge, toast, cereal, tinned fruit
Lunch (x34) Filled rolls, Le snaks, home baking, fresh fruit
Dinner (x34) Tuna pasta bake (chargrill, chop & freeze capsicums before); Garlic bread
Dessert (x34) Fruit salad; Vanilla icecream

Friday
Breakfast (x34) Baked beans, toast, cereal, tinned fruit
Lunch (x34) Filled rolls, Muesli bars, home baking, fresh fruit
Dinner (x34) Roast chicken; Roast potatoes, pumpkin & kumara; Peas; Broccoli & cheese sauce; Gravy; 
Dessert (x34) Banana splits; Homemade chocolate sauce; Vanilla icecream

Saturday
Leftovers before leaders and campers depart
