What's been cooking - 23 May 2010


This week wrapped up my tryout of Sophie Gray's latest cookbook 100+ Tasty $10 Meals. I'll post my official review on Monday. Here's what we ate this week:

Sunday: (Chicken) Chunky chicken cacciatore on wholemeal penne pasta. (This was OK but maybe a little sweet. It was supposed to have olives and capers, so those would possibly have added the saltiness it needed to balance it out.)

Monday: (Beef) Italian meatloaf minis for our Monday group bible study. (These were easy to make and had a nice flavour. Responses from the group were positive and the whole lot got polished.)


Tuesday: (Chicken) Wholemeal penne with chargrilled capsicum and chicken. (This was delicious and easy to make because I already had chargrilled capsicums in the freezer that I had bought cheap, and chargrilled and frozen.)

Wednesday: (Fish) Corn and tuna fritters with salad (These were surprisingly good. I'm not usually a corn fritter fan, but the tuna added a different texture and flavour that appealed. I didn't have tuna in spring water, which the recipe recommended, so used tomato basil flavoured tuna and chopped in some fresh basil from the garden. It worked beautifully.)

Thursday: (Beef) Lasagne. (Actually my own recipe that I needed to test out for Nexus (the Waikato University magazine). I'll post the recipe on Craving Fresh on Wednesday.)


Friday: (Fish) Savoury salmon flan with salad. (This was super quick to prepare and tasted OK, but didn't take my breath away. I probably won't make this exact recipe again - although it was so easy to make I might play around with it to see if I can come up with something we like more.)


Saturday: (Vegetarian) Chargrilled capsicum and chickpea burgers served on baps. (Our favourite recipe of the week. Paul was skeptical when he realised chickpeas were the main ingredient of the patty, but one bite of mine and he was sold. Even better than meat burgers he reckoned. I actually bought a Combustion vege burger from Burger Fuel earlier in the week when I met Paul for lunch and this was much better than that.)

  1. Looking forward to your chickpea patty recipe! I have a few I use, but like to change it every now and then :).
