What's been cooking - 25 April 2010

I was very excited to discover my local Pak'N'Save has started stocking organic frozen whole chickens and chicken pieces again so I've bought a few to keep us going for a while. Now all I need to find is a supplier of organic chicken breast and I'm set.

This week I managed to turn one roast chicken into three meals and chicken stock. Success!
Here's what's been cooking in my house:


Sunday: We went to our friends Bex and Bjorn's house for dinner and ate delicious gnocchi with creamy chicken basil sauce.

Monday: Our flatmate Toia made a frittata for our Bible study shared dinner where we also ate roast chicken, roast beef salad, pumpkin soup, chips, broccoli in cheese sauce and homemade apple pie with cream.

Tuesday: Roast chicken with roast kumara and potato and a sweet cabbage salad.

After dinner I cooked a batch of chicken stock using the leftover roast chicken carcass and some celery leaves I had previously frozen for this purpose.


I also attempted to make Chocolate chunk oat cookies with apple puree replacing half the butter (a Healthy Food Guide tip). This did not turn out well so I'm going back to the original recipe for now.

Wednesday: Satay chicken salad with crispy noodles. (Made with leftover roast chicken from the night before.)

On Wednesday I also made Mexican tortilla rollups using leftover roast chicken, refried beans and salsa made with veges from my garden for the filling. I froze the rollups so they can be pulled out and baked one at a time for lunches. Here's a photo of one I had for lunch on Thursday (served with avocado and more homemade salsa).

Thursday: Our flatmate, Toia, made Moroccan chicken tagine on couscous.

Friday: Chilli con carne served on Basmati rice.

I also baked Oaty ginger crunch on Friday for craft group.

Saturday: Leftover chilli con carne.

  1. Gareth and I are trying something new at the moment. Only doing grocery shopping once a fortnight. Which means meal planning for two weeks! Not sure if it will work, but we get so sick of going to the supermarket all the time.

  2. I like that idea. I just did our menu plan for this week and it looks like I won't need to go to the supermarket at all. I'm just going to use what we have here. Hope I make it to next weekend! If I do, maybe I can adopt your approach. Let me know how it goes.

  3. I love your idea for the mexican roll ups. Did the burrioto casing go funny after being forzen then reheated?

  4. No it was totally fine. I let it defrost a bit then banged it in the oven at about 180 for 20 minutes and it went nice and crisp on the outside, but all melty and hot on the inside.

    I have had success using 1/2 apple sauce in muffins. Haven't tried with cookies. I have put a little (maybe 1/4 not 1/2) in cakes and they have been good too.
