Mexican rollup recipe


These flavoursome and satisfying Mexican rollups can be made ahead of time and frozen individually to pull out as needed for lunches or dinner.

Ingredients
  • 1c cooked chicken
  • 1c salsa
  • 435g tin refried beans
  • 1/2c cheese, grated
  • 6-8 tortillas
Method
1. Mix together chicken, salsa and refried beans.

2. Spread 1/6 of mixture onto one tortilla. Sprinkle with 1/6 of the cheese.

3. Roll up and turn ends under. 

4. Place in a ziplock bag, squeeze out all the air (to prevent freezer burn) and freeze. Repeat steps until you've made 6 rollups.

5. When ready to eat, bake from frozen at 180°C for 30 minutes until heated through. Serve with avocado or sour cream and salsa. 

Variation: For a vegetarian alternative, swap the chicken for a 420g tin of Mexican chilli beans or red kidney beans. (Drain and rinse the red kidney beans first.)

  3. I can't wait to try these! especially to make them for lunch. have to wait a while as with the two week meal planning thing means it takes a while till we get to choose what we are having again!
