What to eat Wednesdays - Basil pesto and zucchini pasta


Basil pesto is such a handy condiment to have in the fridge because you can use it to whip up a delicious pasta dish in minutes. This warm pasta salad epitomises summer for me, with its taste of basil, tomato, zucchini and feta.


Ingredients
  • 200 grams penne pasta
  • 1 medium zucchini (courgette)
  • 1 Tbsp olive oil
  • 2-3 Tbsp basil pesto (to taste)
  • 2 diced tomatoes or a handful of cherry tomatoes
  • 100 grams feta cheese, diced
  • 1/4 cup pumpkin seeds, lightly toasted


Method
Boil the pasta until al dente. Julienne the zucchini (cut into matchstick shapes) and saute in the olive oil until cooked to your desired consistency.


Mix the zucchini and other ingredients through the drained pasta and serve.

  3. I'm going to try this tonight with a variation - I've got no Zucchini, so will substitute with celery & grated carrots.
