What to eat Wednesdays: Stir-fry beef and broccoli with cashews



I love this Destitute Gourmet recipe from Sophie Gray's more stunning food from small change, as it makes a little bit of meat and vegetables go a long way. It's also healthy and tastes delicious.
Ingredients


  • 1t sesame oil
  • 400g lean beef cut into thin strips - schnitzel, rump or pre-cut stir-fry beef
  • 3 cloves garlic, crushed
  • 1/2c broccoli florets (and/or any other veges you want to use up)
  • 1T fresh ginger, grated
  • 3T soy sauce
  • 2T rice wine/sake or rice wine vinegar
  • 1T brown sugar
  • 1/2c toasted cashews


Method
1. Heat oil in a large pan or wok and stir-fry the beef.

2. Add garlic, broccoli and ginger, then the soy sauce and rice wine and toss through.


3. Sprinkle in the sugar and continue to stiry-fry until vegetables are crisp tender.


4. Serve on basmati rice (or plain white rice for a cheaper, but less nutritious option) and top with cashews.

  3. This looks and sounds interesting! But before I cook this interesting recipe, I would like to know if I can replace the broccoli to another vegetables?

    1. You sure can. It's the sauce flavours that make this recipe so good. Throw in any stir fry veges you fancy.
